Easy Almond Milk
This recipe yields almond milk with a thicker consistency than store-bought. If you prefer a smoother, thinner consistency, line the sieve with a double layer of cheesecloth before pouring the almond milk through.
Ingredients:
- 1 cup (5 1/2 oz./170 g) whole unpeeled raw almonds
- 3 cups (24 fl. oz./750 ml) water
- Agave syrup, to taste (optional)
Directions:
In a Vitamix blender, combine the almonds and water. Cover and blend on low speed, slowly increasing the speed to high. Blend on high for 1 minute.
Pour the almond milk through a fine-mesh sieve into a bowl. Taste and sweeten with agave syrup, if desired. Cover with plastic wrap and refrigerate until chilled before serving. Makes about 2 3/4 cups (22 fl. oz./680 ml).
