This long, deft knife with a clipped tip is also a chef favourite for cleaning & portioning fish. Shun's Premier collection is distinguished by hand-hammered blades that evoke the artistry of traditional hand-forged knives.

    • Blade features core of extremely hard VG-MAX "super steel" clad on each side with 34 microthin layers of stainless-steel.
    • Striking hand-hammered finish (tsuchime in Japanese) reduces drag when cutting & helps to quickly release food from blade.
    • Walnut-finish PakkaWood handle has two-position design, providing trigger grip for pull cuts & perfect balance point for pinch grip.
    • Each knife is handmade by skilled specialists, requiring at least 100 steps to craft.
